I had my lower wisdom tooth filled two weeks ago. It was a deep cavity. Over the last few days I have noticed increased sensitivity to heat (mostly hot drinks). It spreads along my jaw line for a few seconds then gradually wears away. My dentist said to wait to see if it get worse and may remove it. I am going on holiday next week and am scared that it will suddenly get worse while I am away. I dread having pain and not being able to treat it. Could it get worse quickly or will it get better or gradually change. I have a bit of a fear of dental treatment and tooth pain after a bad experience

Your dentist is right about wait and see. It might settle down. You could ask him if in his opinion you should take some antibiotics with you on holiday. He might also suggest an x-ray. Best of luck.
